Ingredients
- '4 chicken thighs (skinless)
- 1 small spoon of unrefined palm oil
- 3 ripe plantains, sliced into rounds
- 2 onions, thinly sliced
- 2 tomatoes, diced
- Pepper, to taste
- Chopped parsley for garnish
- 1 green bell pepper, diced
RECIPE
In a large pot or skillet, heat the palm oil over medium heat.
Add the thinly sliced onions and sauté until translucent.
Add the chicken thighs and brown them on both sides.
Add the tomatoes, green bell pepper, and a bit of pepper. Mix well.
Cover the pot and let it simmer for about 20 minutes.
Add the sliced plantains and mix gently.
Continue cooking for another 15-20 minutes until the plantains are well-cooked and the chicken is tender.
Garnish with chopped parsley before serving.
